Traditional Portuguese Recipes: Broa Castelar

Ingredients
- 2 kg Peeled sweet potato
- 250 gr Wheat flour
- 500 gr Corn flour
- 2 kg Sugar
- 250 gr Shredded coconut
- 10 Eggs
- Zest of 1 orange
- Zest of 1 lemon
- 500 gr Honey
Preparation
Boil the potatoes and the sugar in a water-filled pot. Mash the potatoes until you get a puree and reserve.
Mix the rest of the ingredients and add the mashed potatoes. Cook in a copper pot until you get a consistent dough. Divide the dough and shape it.
Brush with egg yolk and cook in the oven at 280 ºC until the outside is caramelized.
